INGREDIENTS

▢ 1 teaspoon smoked paprika
▢ ¼ teaspoon cayenne pepper
▢ 8 chicken drumsticks
▢ 2 tablespoons olive oil - extra-virgin
▢ 1 teaspoon kosher salt
▢ ½ teaspoon black pepper
▢ 1 teaspoon garlic powder
▢ 1 teaspoon onion powder

½ sheet nori, sliced
½ cup microgreens
Mayo or plain Greek yogurt
Sesame seeds
1 cup panko breadcrumbs
¾ teaspoon sea salt
3 large eggs, beaten
1¼ cups chopped scallions
3 packed cups finely shredded cabbage
Olive oil for pan

1 ½ cup pistachios or other nuts
2 pounds asparagus, woody ends trimmed
1 cup plus 3 tablespoons soft herbs, such as dill, parsley and tarragon, or a combination
6 tablespoons minced scallion
3 tablespoons fresh lemon juice (or cider vinegar)
Large pinch of kosher salt, plus more as needed
½ teaspoon freshly ground black pepper
2/3 cup extra-virgin olive oil, plus more for serving
1 ½ cup coarsely grated cheese (1½ ounces), preferably a young sheep’s milk, such as pecorino or Manchego, but any firm cheese works, plus more for serving

Heat oven to 350 degrees. On a rimmed baking sheet, spread pistachios in an even layer and toast for 5 minutes. Remove from oven and let cool enough to handle, then roughly chop.

Meanwhile, fill a large skillet with 1-inch water. Place steam basket on top, cover and bring to a simmer. Steam asparagus until just tender, about 5 minutes. Drain.

Finely chop 6 tablespoons mixed soft herbs. In a medium bowl, combine scallions, lemon juice, a pinch of salt and the pepper, and let sit for 2 minutes. Whisk in oil, then stir in pistachios, cheese and chopped herbs.

To serve, drizzle asparagus with oil and salt to taste. Dollop with dressing, tear remaining cup of herbs on top, and sprinkle generously with more cheese. Taste and adjust salt as needed.

Mix spices and oil together in a small bowl to form a paste

Bake the drumsticks uncovered for about 40 minutes, until their internal temperature, measured with an instant-read thermometer and not touching a bone, reaches 165°F.

Preheat oven to 400F and line a baking sheet with sheet with parchment paper

Brush spice paste onto chicken drums coating all sides

Drizzle the mayo or yogurt over the pancake. Top with sesame seeds, pickled ginger, nori, and microgreens.

Heat a nonstick skillet over medium heat. Brush the skillet with olive oil and use a ¼ measuring cup to scoop the cabbage mixture into the skillet. Flatten gently with a spatula so that the mixture is about 1/2 inch thick. Cook for 3 minutes per side, or until browned, turning the heat to low as needed. Repeat with the remaining mixture, wiping out the skillet and brushing with more oil as needed.

In a large bowl, combine the cabbage, scallions, panko, and salt. Gently mix in the eggs. (Note: the mixture will be very loose and cabbagey, not like a flour pancake batter. If it's very dry, let it sit for 10 minutes).
